I know people always talk about lazy Sunday mornings, but around here we’re usually racing to get to church, so Saturdays are the slow start day. Not always, of course. But when it does happen, it’s like the ultimate luxury.
When we have one of those days, especially in winter, I make oatmeal. Not the gag- inducing instant stuff. This takes time but yields a breakfast that’s almost like an ice cream sundae. Except it’s hot 😊
First, start the oatmeal.Slow oats only, please. I do mine in the crockpot, which takes about an hour on High, but I’m not ready to eat for a while, so that works. You can also make it on the stovetop in about 10 minutes. I use equal proportions of oats, milk, and water. Cook it slow on a low heat and you get a creamy comfort base.
Then I toss a handful of chopped walnuts and shredded coconut into the pan and stir them around for a while, until they’re fragrant and toasty.
And voila. It’s creamy and crunchy, savory and sweet, and utterly delicious.
