Recipe Recommendation: Garlic Smashed Potatoes

I caught this video on Facebook a couple of weeks ago and knew that I had found the perfect way to cook the bag of baby potatoes we’d picked up at a farm stand. We had them when The Geek came to visit, to accompany a couple of steaks we tossed on the grill. The verdict? Well, as The Geek, said, “The steak is excellent, but these potatoes are stealing the show.”
I didn’t have the fresh thyme called for, but a shake of dried thyme in the melted butter took care of that problem. It was very hot the night I made them so I baked them the bare minimum time. They were still AMAZING, but I think a few extra minutes to get them super-crispy would have made them even more outstanding.

Bottom line: go for it.
