All this week, Harlequin authors are sharing some of their favorite recipes as part of the Sweet & Spicy Holiday celebration. For my contribution, I’m offering a recipe for Apple Cranberry Pie (the link should lead to a printable PDF).
(A friend gave me this recipe many years ago. I don’t know where she got it, so I can’t credit the creator. But whoever you are, thank you. You rock!)
While this pie doesn’t appear in any of my books, it’s delicious when made with McIntosh apples, which hail from the part of Eastern Ontario where my Comeback Cove books are set. I love to think of my characters heading into an orchard in the fall to pick a bushel of Macs. And come the holidays, this pie would be both appropriate and delicious.
In a large bowl, combine:
- 3/4 c. brown sugar
- 1/4 c white sugar
- 1/3 c. flour
- 1 tsp cinnamon
- 4 c. peeled, sliced McIntosh (or other) apple slices
- 2 c. cranberries (whole or chopped, doesn’t matter)
Pour the apple-berry mix into a pastry lined pan. Dot with butter. Top with a regular or lattice crust. Bake at 425 for 40’ish minutes
